You're 18 months away from a completely different life. 18 months. That's how long it takes. Not "forever." Just a year and a half of dedication, consistency, and a bit of sacrifice. I was scrolling old photos the other day, and it's insane how much my life changed between 2021 and 2023. Then 2023 to 2025. Just think in 18-month increments. You don't have to sign yourself up for a journey that lasts a lifetime. Just commit to achieving 1 big, meaningful goal over the next 18 months. And watch what happens.

Not my usual cup of tea but these ho fun noodles with beef and black bean sauce were out of this world. China Town, London.

Delicious little snack. Grilled mackerel on toast with harissa aioli and pickled red onion. Plenty of garlic on the pan fried sourdough. Yum

@DanseusedeTango It was a classic spaghetti pomodoro. Best pasta invented IMHO 😊 I skipped the tuna at the end.

A bit of simple home cooking this evening. Pan fried seabass with tomatoes, spinach harissa and basil. Lots of olive oil of course.

@LukasJuhaniak As much as I love avocado I don’t think it’s a good fit for this English breakfast. But you could have done worse and asked for baked beans 😅

Lovely little brunch at WatchHouse café. I'm not really a fan of poached eggs so asked for extra sausage and avo.

I used to go to pastry shops more often and perhaps I should make it a habit again haha. This was a tasty mushroom and spinach pain suisse and a dulce de leche flan. At Kayu Bakehouse in Mayfair, London.

Bruschetta with Vesuvio tomatoes and wild oregano. The simplest plate of all yet so delicious.

Sea bream with a prawn curry sauce, spinach and pickles. Accompanied by a delicious bowl of kimchi.

Pophams Bakery in Islington. Great place. This was my light lunch. Coffee, a pinto bean soup with homemade sourdough and a stunning strawberry pastry.

Today I had a great lunch at Kolae restaurant in Borough Market, London. Delicious cuisine from Southern Thailand at a great price point. Well worthy of its Michelin Bib Gourmand award. I'll be back for sure!
