Light rye; za’atar; green olives; sourdough. Here’s how I made it: Dough build - 25% leaven, 85% strong white flour, 15% rye, 75% hydration, 5% za’atar blend, 10% EVOO, 20% green olives, 2.5% salt. Method: - mix everything but hold back the za’atar, oil, 5% of the water, and salt, and autolyse for 30 mins - mix the za’atar and oil together, then add along with the salt and extra water to the dough via bassinage, 30 min rest - four hour bulk, with a light couple of coil folds every hour to develop the gluten and structure - laminate the olives into the dough then proof for a final hour - (no pre-shape) shape then ambient proof for an hour - cold proofed for around 14 hours - baked at 250c for 35 mins, releasing steam and removing lid from Dutch oven after 20
