We are grateful to the USDA for earmarking funds for the expansion of local processing. As many of you know, White Oak Pastures was one of several recipients of the local meat capacity grant to expand our existing on-farm poultry abattoir to also accommodate the processing lamb, hogs, and goats. Livestock processing in the United States has centralized incredibly post World War II. Only a few decades ago, there was a butcher or two in most every agricultural community. Today, processing is a lost art and has been centralized to only a few major packers. When we think about resilience in our food supply, it doesn't only mean more farms. It also means more processing. Consumers don't buy cattle, hogs and sheep... consumers buy beef, pork and lamb.
