As an Indian in the food industry who eats food for a living, has run restaurants from multiple cusiines and has eaten all over the world, I can assure you there is nothing actually called 'Indian cuisine'.
I don't mind anyone hating on Indian food, Im also aware that any comment on the subject will attract the now regular 'all Indians and their food are dirty' remarks.
Regardless, its unfortuante to see Indian food reduced down to 'curry and naan'.
1. There is no cuisine called 'Indian cuisine' nor is there any staple Indian cuisine. Every state in India has an entirely different cuisine.
2. When foreigners say 'Indian food' they typically refer to North Indian cuisine which is also very very broad.
3. No, most Indian food is actually not curries. The word 'curry' itself is very much a British intepration. No Indian uses the word curry or any hindi equivalent.
4. For the most part, Indian food outside India is not very good (understandably so).
5. No, the videos of dirty road side sellers is not how most people eat in India and are super rare exceptions. I've lived in India for 3 decades and work in the food industry and I have never seen any stall that dirty. That being sad, im happy for any lack of hygiene to be called out, even when accompanied with overtly racist remarks (this is the norm now not the exception).
6. Most people don't eat from stalls.
7. No, Indian food isnt a blind aggregation of spices. Not sure what you guys are eating.
8. Most Indian food is not spicy. I live here. I don't remember the last time I had spicy food. And im very sensitive to spice.
9. There are probably 20 distinct entirely different cuisines in India that have little in common.
10. My favourite cuisine is Japanese, followed by Mughlai (a subset of 'Indian cuisine').
