Mis constantes visitas a Chiribita Tacos me han motivado a hacerme con un cacharro más. Seguramente no haga nunca un taco pero sí otras cosas 😅

Hay un problema muy fuerte de escasez y de pesca descontrolada de la almeja chocolata, no la consuman que se está acabando. No se puede “sembrar” y hay una sobre pesca de la misma. Por otro lado también, el ~30–40% del pescado que se vende en México no es lo que dice ser. En especies como marlin, la sustitución puede superar el 90%. En pez vela, prácticamente el 100%. No es error. Es un sistema. El problema no es solo económico. Algunas de las especies sustitutas tienen perfiles tóxicos distintos, otras están en riesgo, y las vedas se vuelven irrelevantes cuando basta cambiar la etiqueta. México está muy por encima del promedio mundial de fraude pesquero. Y aun así: sin trazabilidad obligatoria real, sin sanciones consistentes, sin control efectivo. Pagas huachinango y comes otra cosa. Pagas marlin y no sabes qué estás comiendo. Y el océano se vacía en silencio, detrás de nombres falsos.
