@HandyGingerGal the other option is to do a slow braise. i’ve been experimenting with braising the thighs and legs. the legs are so tendon-y. really needs time to break down all that connective tissue.

I smoked my first duck today. Full brine prior, but I'm sad to say the meat is flavorful but still very chewy. If anyone knows how I can make my ducks more tender, I'd appreciate some tips.
