People are proud of the NHS because of what it achieves despite failing public health and food policy upstream. It is a sick-care system forced to manage diabetes, heart disease, stroke, dementia, bowel cancer, kidney failure, frailty and care-home dependency- all driven by insulin resistance. Hospitals do not create these costs. Policy does. Denmark removed trans fats at source; Brazil treats ultra-processed food as a health risk. The fix is structural: tax industrial cooking oils that drive insulin resistance, and label and tax ultra-processed, high-glycaemic-load foods that keep insulin spiking. Save tens of billions. Relieve NHS and social-care pressure.
