Early stopping is a powerful regularization technique. It basically prevents your model from wasting its time: if it ain't learning, it shouldn't keep running. That being said, don't jump on it right away. Sometimes, letting your model train for longer may surprise you.

A lot of machine learning models aim to replace humans instead of helping them. That's a high bar, and in a lot of use cases, anything less than human-performance is a non-starter. One reason these models never make it into production.
