Well....when the guy smoking the meat has to be paid 30 an hour, have full medical, get 26 paid vacation days, 7 paid sick days, and they might need 20 weeks off to take care of their sick aunt and you have to hold their position open because of the law. It make it expensive to smoke a brisket for 16 hours

The saddest part about BBQ is it used to be poor people food. Used cheap cuts and slow smoked them till tender.
Today it is more expensive than a typical steakhouse, charging $36/lb for brisket.
Worst thing to happen to BBQ ever is it became popular.
