Bison Stew... built, not thrown together. Hard sear for Maillard. Deglazed in layers with Cabernet... every bit of fond kept and carried forward. Broiled carrots for color. Onions browned, garlic added, meat finished properly. Cabernet reduced, then thyme, crushed rosemary, celery seed, Worcestershire; seasoned with intent, not guesswork. Beef stock, bouillon, and tomato paste for depth. Low simmer to build. Then potatoes, celery, barley, and tomatoes. Perfect timing so nothing breaks down or gets lost. Finished with a slurry to bring it all together. Chives on top for balance. This isn’t stew… this is what happens when you respect process. 🔥 Huge shout-out to @DadsSeasonings for the test seasoning.
