I regularly make dry sabji, dal tadka, omelet, burji, chivda, fried rice, pulao, upma, pohe, cheela in my carbon steel wok. In general anything that isn't heavy on tomato or dairy is great in the wok. Everything Indo-Chinese can be made in woks. Hack is getting wok VERY hot.

My immediate feel is that the specific familiarity of that street pav bhaji flavour likely comes from the tons of butter meeting the high heat of the tawa. The veggies always tend to get boiled even on the street. But, while browning them will add a pretty rich depth for sure, those with a strong memory of a particular flavour might not find it to be “authentic”

Key meta-recipe tip for chowpaty level pav bhaji at home is to not just boil veggies but also roast em at high heat on iron in single layer before mashing everything together. Even if you have to do it in batches. Maillarding makes Mumbai pav bhaji special. What say @krishashok?

Going home means getting some extra juicy gossip. 1. Son of a friend of my mom, who was in the US, and on his 2nd marriage, has gone bankrupt due to a gambling addiction and has moved back with family. 2. Cousin who snagged a girl from a rich politician family has announced to his wife that he has grown tired of her, after being egged on to dump her by his older sister. 3. The Older sister is a social butterfly gold digger who has a dozen other boyfriends and simps on the side, and her poor in laws are constantly disturbed by her partying. 4. The patriarch of that rich political family in (1) has barred the daughter from seeking divorce as her older sister is already divorced and remarried, while her younger sister's mother in law is very conservative and looks down upon divorce. So the old man feels the divorce quota in the family has been exhausted. Plus although he is a gentle giant and a congressi, he will readily castrate my cousin if he goes for divorce. So sadly the marriage is now in limbo. 5. Another of Mom's friends who is visiting her son in the US has set up an outdoor kitchen as cooking inside the house caused her son to get complaints from co workers that he smelled of curry. 5.5. Upon arrival, this friend's son had announced to her shock that he had been separated from his wife for several months, and they were coparenting their kids (hence the cooking duties). 6. Son of another of Mom's friends who always brags about being very rich has a wife who works in a bank (now headed by an ex CEC) as a loan officer. They bought a Porsche SUV 😏. Then totaled it. The son borrowed money from other friends of mom to repair the Porsche but lied to them it was to fund cricket coaching for his son. And refuses to return the money after he was exposed. Now everyone is finding out that this family is a serial borrower and defaulter, but was only projecting being rich on borrowed money. 7. Another cousin who is descended from a mercenary but now Bhajapai political dynasty and tried to become Bollywood hero, failed and got into politics, recently met up with a divorced classmate (also from a political dynasty) and they hooked up. After much opposition and drama, his grandmother finally lent them outside support and this has allowed the couple to form a stable marriage. 8. A cousin on my dad's side who is a professor and in his second marriage has separated from his 2nd wife. My aunt who keeps poking her nose in his marriage is the likely cause. Plus he keeps on having affairs with his students. The separated wife has demanded his 3BHK plus monthly alimony. My cousin now lives with my aunt and they pretty much travel and go out like a married couple. I think this is what the average Indian male Oedipus actually desires ie killing his dad and marrying his own mother. After consuming this info I need an extra dose of Crocin for the resultant headache.
