If you need low wage butchers, drivers, and retail to make it feasible, then maybe that's the market signaling that there is value to be gained in rural areas.

Most of the takes on this are stupid. If you pay 120K for meat packing jobs, some Americans will leave other jobs and take them. But since current labor supply is zero sum, this just creates inflation and a shortage somewhere else. We are at full employment of the functional.

@leviathanww @Tommy8788 @Empty_America Ngl, I care more about rural/small town areas than cities. Places like NY and LA are always going to need to import food from across the country, but there's many places where local food production could increase QoL in my opinion.

@obod_bodo @Tommy8788 @Empty_America Maybe some of the economic problems in, say, upstate New York could be mitigated if there was robust demand for NY raised and slaughtered beef? But it would be impossible to match the scale/efficiency of modern Oklahoma-style feedlot/processing plant system.

@Tommy8788 @leviathanww @Empty_America The question was how do you pay butchers more while keeping the labor supply constant. My answer would be to eliminate non-value added steps. Also my premise isn't based 100% on price but general quality of life improvements. Better jobs and local beef doing count in gdp

@Tommy8788 @Empty_America With the three tiered system in alcohol, the distributer and the retailer often take 66% of the final retail price. That's why microbreweries like on site sales so much. If the butcher could sell directly to customers they could pay higher wages.

@leviathanww @Tommy8788 @Empty_America It likely wouldn't. I think sprawl made that difficult. But I also don't like current food production systems. You could maybe have a logistics co-op of independent butchers that sells and ships their excess into cities. Ironically NYC used to have a meat packing district.
