Creamy Beyond Burger Taco Chili Pasta — Instant Pot Ingredients 2 Beyond Burger patties ½–1 onion, chopped 2 cloves garlic, chopped or minced 2 carrots, chopped small 1 can kidney beans, drained and rinsed 1 can low-sodium pinto beans, drained and rinsed 3 cups tri-color rotini 3 cups chicken broth 1 can crushed tomatoes 1–2 tablespoons tomato paste 1 packet taco seasoning 1 teaspoon chili powder ½ teaspoon cumin, optional ½ cup coconut milk or evaporated milk Plant-based cheese Chips or tortillas for serving, optional Step-by-step Prepare everything first. Chop the onion, garlic, and carrots. Drain and rinse the kidney and pinto beans. Turn the Instant Pot to Sauté. Add the Beyond Burger patties. Break them apart with a wooden spoon and cook for about 3 minutes. Add the onion and carrots. Cook for another 3–4 minutes, stirring occasionally. Add the garlic. Stir and cook for about 30 seconds. Cancel Sauté. Pour in 3 cups of chicken broth. Scrape the bottom of the pot thoroughly. Make sure nothing is stuck to the bottom, or the Instant Pot may display a burn warning. Add the seasonings. Stir in: Taco seasoning Chili powder Cumin, if using Tomato paste Add the beans. Stir in the drained kidney beans and pinto beans. Add the rotini pasta. Spread it evenly across the pot. Gently press the pasta into the liquid. Do not aggressively stir after this point. Most of the pasta should be touching the broth. Pour the crushed tomatoes over the top. Spread them evenly, but do not stir them down into the pot. Close and lock the lid. Set the valve to Sealing. Pressure cook on High for 4 minutes. When cooking finishes, allow a 2-minute natural release. Carefully perform a quick release. Turn the valve to Venting while keeping your hands and face away from the steam. Open the lid and stir everything well. It may look slightly soupy at first, but it will thicken. Pour in ½ cup coconut milk or evaporated milk. Coconut milk will make it richer and slightly sweeter. Evaporated milk will give it a more traditional creamy flavor. Add plant-based cheese. Start with about ½ cup, stir, and add more as desired. Let it sit uncovered for 5 minutes. The pasta and sauce will continue thickening. Taste and adjust. Add more chili powder, taco seasoning, salt, or broth as needed. Serve. Top with crushed chips and plant-based cheese, or spoon it into tortillas for taco-style wraps.
