Here's a practical per-person planting guide for the crops that fill most American summer gardens:
- Tomatoes: 2 plants per person. Produces 15–25 lbs per plant across the season — enough for fresh eating plus some to put up
- Zucchini: 1 plant per household. Not per person. Per household. Scale nothing else in this chart the same way
- Cucumbers: 2 plants per person covers fresh eating and pickling
- Lettuce: 6 plants per person, but stagger them every two weeks rather than planting all at once. Otherwise they all head up and bolt at the same time
- Green beans: 4 plants per person gets you a reliable weekly side dish through summer
- Peppers: 2 plants per person — one sweet, one hot covers most cooking uses
- Basil: 1 plant per person produces more than almost anyone uses. Start with one
- Kale: 3 plants per person, planted for fall harvest September through December when heat stress drops and flavor improves 🌿
Scaling for household size: multiply everything by the number of people except zucchini, which stays at one plant regardless of family size.
The garden that matches your eating habits is the one that actually gets used.
