What’s the healthiest way to eat eggs? A 1998 study found that the body absorbs about 90-91% of the protein in cooked eggs versus only 50-51% in raw eggs. Heat denatures the proteins, making them much easier for digestive enzymes to break down and use. But what about the yolk? Consuming raw yolks preserves more heat-sensitive compounds (vitamin A, E, carotenoids, lutein, zeaxanthin) and avoids oxidation. But the common advice is to not eat raw eggs, including the yolk, to avoid harmful bacteria. So the best bet is to consume runny or jammy yolks with cooked whites. That means soft boiled, poached or over easy eggs are the healthiest eggs to eat, if we look at it rationally.

I do the opposite of almost everything the “experts” tell me. I eat eggs every day. I eat fatty red meat and bacon. I cook with real butter. I salt my food. I eat liver. I avoid seed oils. I don’t buy low fat products. I don’t count calories. I eat until I’m full. I don’t snack. And yes, my LDL cholesterol is high. Apparently that alone is supposed to terrify me. Never mind that my triglycerides are low. Or that my HDL is high. And my blood sugar is better than when I followed the “balanced diet” advice. One number goes up and suddenly I’m treated like a ticking time bomb. That logic makes less sense to me the deeper I look into cholesterol. LDL is not “bad cholesterol.” Your body literally makes cholesterol on purpose. It uses LDL to transport energy, hormones, fat soluble nutrients and repair materials around the body. When you eat low carb and burn more fat for fuel, lipid transport changes. Of course it does. But instead of asking why LDL changed, the entire conversation becomes fear. Statin. Low fat diet. Eat the carbs. Avoid the red meat. Meanwhile people following the official advice are more overweight, more diabetic, more inflamed and more medicated than ever before. That should raise more questions than my LDL number. I genuinely think the cholesterol story people were given is one of the biggest health scares ever sold to the public. Have you had your LDL and triglycerides checked lately?

The human jaw was built to tear, grind, and crush. It was the most worked muscle group on the body for two million years. Children chewed bone, sinew, gristle, raw vegetables, dried meat, all day, every day, from the moment they had teeth. Then, somewhere in the last hundred years, we replaced all of it with purees, smoothies, white bread, ready meals, and yoghurt pouches engineered to be swallowed without chewing. The consequence is sitting in every orthodontist's waiting room in the country. Dr Robert Corruccini studied isolated rural populations who still ate traditional, tough, fibrous diets. Their rate of malocclusion was near zero. Within three generations of processed food arriving, the rate climbed to over 85 per cent. Genetics cannot move that fast. The food did it. The jaw, deprived of mechanical stimulation in childhood, fails to grow forward and outward. The dental arch comes in too narrow to hold the teeth. The teeth crowd. The palate stays high and vaulted. The tongue, with nowhere to rest against the roof of the mouth, drops low and sits in the airway. The nasal passages stay underdeveloped. The child becomes a mouth breather. The mouth breathing reshapes the face further, recessing the chin, narrowing the eyes, lengthening the midface. Then we send the child to an orthodontist, who fixes the symptom with eight grand of braces, and to a sleep specialist, who fits a CPAP for the apnoea the underdeveloped airway has now produced. Nobody mentions the food. Feed children meat on the bone. Feed them tough cuts. Make them chew. The face is a muscle. Train it.
