À Kinshasa, je découvre un ingrédient spécial : le safou. C’est un fruit avec une peau violette. À Tokyo, je ne vois jamais ce fruit au marché. Au Japon, je ne l’ai jamais vu, donc je pense que peu de cuisiniers japonais le connaissent. Ce fruit a un grand noyau. La chair autour est épaisse et un peu collante, comme une pâte. L’odeur est forte. Avant de l’utiliser dans la cuisine japonaise, je dois d’abord vérifier moi-même son usage de base ici. Je vais regarder, goûter, et faire des essais simples. La saison est courte, alors je suis content d’en trouver maintenant.
