@KellyScaletta @EMC2wi Mini sheet pans work great for this, I use my half sheets for quart bags of soup, pumpkin, anything soft really, but I have a whole chest freezer of space for the pans.

When I freeze stuff, I even it out and freeze it on its size, then once it's frozen, I can stack them vertically and organize them like books in the freezer.

So on another note, in case you're wondering what happened to my "15-minute challenge" I've sort of morphed it into a "no-can challenge."
I am trying to figure out how to live my life without processed food or spending all day, every day in the kitchen or spending outrageous amounts of money on food.
So I've been working on how to do that, but I need to see if what I'm doing is working first. So far, it is.
They did a study of people who only cut processed food from their diet. They didn't change caloric intake or exercise, but over the course of a year, they lost weight, lowered their blood pressure and and their blood sugar.
(My sugar is fine, my blood pressure is not). I'm 5'7" and a somewhat muscular 180, so I'm not "fat" but I could lose about 10 pounds.
I've been thinking about my eating habits, and when I eat poorly, it's a matter of "human empathy." I eat what is laziest and easiest.
So I thought, "What if the laziest way to eat was the best way to eat?"
So I ordered a bunch of BPA-free reusable freezer bags from Amazon, and I've slowly been building up a freezer full of "homemade TV dinners."
I've got red beans and rice, burritos, hamburgers, chili, etc. Right now I have about 60 meals that are individually frozen and homemade from fresh produce.
Now I'm getting to the point where if I spend just an hour or two twice a week in the kitchen, I can "cook" more than I eat" and keep my stockpile going.
Like last night, I threw a frozen burrito in the microwave, but that frozen burrito was a steak burrito with homemade black beans, cilantro-lime rice, a mix of monterey jack and quesadilla cheese, and dipped in homemade salsa. But it took no more effort to "make" than a store-bought instant-death burrito.
So once I get into this rhythm and know it's not just a theory but an actual workable lifestyle change, I'll start sharing more on that, both here and on YouTube.
