If you're not especially familiar with canine anatomy you likely wouldn't accomplish much with a knife. The attack would probably be over unless you had it on you right then and there. Pain turns their brain off - they'll fight harder. There is no really "good" thing to do when a pitbull goes murder mode. They are just built with tiny ass brains and their vital organs are encased in meat, hide, and bone. Best thing to do is to hit it in the head with something heavy or if you're really confident, put it in a full nelson choke hold and choke it out. Personally, I know Pitbulls like to bite and hold. I'd try to get my belt around it's neck, through the loop, and strangle it from behind. They're so dumb when they're like this they'll most likely sit there and die.
