100% of our barley will be milled on site. To process this grain we are building a two-storey floor malting facility that offers sights and flavours that are rarely seen in modern whisky production - including a traditional kiln with a fully operational ventilating pagoda

@XantheClay Our gin is only made with locally grown ingredients.

Writing a dozen recipes for this month and trying really hard to stick to British grown veg (and citrus). It’s hard.

Cutting down hedges is much easier with an electric hedge trimmer. The amount of light I now have in my lounge is insane.

@gin_a_ding_ding For most, it doesn't matter, they just buy a pretty bottle. Doesn't stop us from doing the right thing though.

Does buying sustainable spirits matter to you? And, if it does, how do you choose? Do you research the sustainability of a spirit and if so where/how? Really interested in all opinions please. TIA!
