Chipp Inn circa 1935. As a Polish-owned tavern serving a predominately similar ethnic clientele, The Chipp, was an enthusiastic promoter of beer from White Eagle, Chicago’s sole Polish brewery, The brewery, in turn, reciprocated by supplying both exterior and interior signage.

This @barstoolWSD tweet raises an interesting question! I subscribe to pretty much every PR and food/bar newsletter and have a ton of hospitality Google Alerts so I searched my 20 year old gmail account for "tavern style" and first press mentions I found were in December 2018.

This has been bothering me for a while now. When did "tavern" style become a thing? I never heard it in my life until the last 5-7 years I feel like. There's thin crust and there's deep dish

@chicagobars @barstoolWSD …having been created in 1962 by the Tombstone Tap, a bar located across from a graveyard in Medford, WI. It became so popular that they began selling it frozen along with a countertop pizza oven. We had one from the 1970s into the 1990s until it nearly torched the back bar.

A 1955 fire led to a temporary closure and remodeling and the business struggled after the Kennedy Expressway opening and El line expansion. The lounge introduced a piano bar & belly dancer in the 1970s but it couldn't overcome the neighborhood changes and closed in 1976.

Originally a coffee shop, and later expanded to a full service restaurant, banquet room and late hours cocktail lounge, the business was a popular spot for hosting neighborhood events.

From the Chipp Inn attic… Circa 1950 postcard of the Terminal Restaurant & Lounge at 2529 N Kedzie. Opened and operated by the Papas family from 1910 – 1976, the establishment’s name originated from its proximity to the Logan Square El stop.

From the Chipp Inn attic... While Chicago's early breweries were primarily German, three of consequence were Irish: Fortune Bros (1857-1881), Keely (1876-1953) & McAvoy (1889-1920). This circa 1908 tray advertising McAvoy's Malt Marrow notes that it's "NOT Made in Germany".

The club featured a number of all female bands during WWII, including the Tucker Sisters, a trio of sisters from Texas who achieved national prominence in the 1940s & 1950s.

From the Chipp Inn attic… Circa 1943 postcard from the Little Club at 6949 S Cottage Grove. Open from 1941-1949, this club featured live music daily, typically 2 bands performing ‘til 4 or 5 am. The site then became the Cotton Club and, for a short period in 1958, Swingland.

@chicagobars The last drink we served which had more that two ingredients was a White Russian and that was back in the 1970s. Plus our bartender turnover rate is nearly zero. Nonetheless, always impressed by this long-standing Jefferson Park school which puts forth "A-List Startenders".

A portion of the building was erected prior to the Civil War by John J Parker and it was expanded by Louis Neudecker in 1894. Louis ran the saloon until leasing it in 1897. The hotel and saloon would be operated by several other families thereafter until it was razed in 1938.

From the Chipp Inn attic... 1918 postcard of the Park View Hotel Bar located in Marine, Illinois. A one-time Madison County agricultural hub, the town’s name came from early settlers, many of whom were sea captains, as its blowing prairie grass reminded them of the sea.

The festival runs from March 12 -15 at the Delta Marriott in Mt. Pleasant, Wisconsin. We know a good part of this crowd from the tavern tours Phil organized from the Chipp Inn and can vouch that they know how to have a good time. See website for details: bixfest.org

Phil Pospychala, a long-time Chipp Inn patron who passed in 2022, had an encyclopedic knowledge of all things related to beer and jazz. He’d occasionally lead tours of classic Chicago taverns & bygone breweries, arranging for a jazz band to perform on the bus & at each stop,
