I yet have to see a popular science article that correctly explains what entanglement is. Look, if your example also works with a pair of shoes ("I measure one, it's left, and that instantly tells me something about the other.") then it's a non-quantum correlation. And of course Einstein had no issue with such a correlation whatsoever.
Einstein's issue was that the wavefunction (a) is supposedly physically real and (b) updates faster than the speed of light. He said these two things can't be true together, either it doesn't update faster than light or the wavefunction is an ensemble description of an underlying deeper theory (hence, quantum mechanics is "incomplete").
Einstein's misgivings of quantum physics and his worry about the spooky action at a distance had NOTHING TO DO WITH ENTANGLEMENT! He went on about this before the word had even been coined! It just so happened that the EPR paper used an example that would later become called entanglement.
