Growing up mom would make this a lot but often didn’t have the bell peppers on hand so it was just a casserole of the stuffing ingredients topped with cheese.
We called it “slop”.

@CassiaBeltran Thank you! Yes, rice and beans were both made fresh with actual fresh tomatoes for the rice & dried arbol chiles with the beans. Had plenty of leftover beans so planning to do some enchifrijoladas later this week.

@touchgrass_ron Even the tortillas? They have raised edges that are very uniform. And that jalapeño isn’t roasted. Pickled yourself too? Above and beyond, man. Very good.
