@RepMeijer I tried Bachan’s Japanese BBQ sauce tonight on some chicken. It’s life changing

Last night tried the koji rice ‘dry aging’ cheat. Coated ribeye with koji rice and left uncovered in fridge for 48 hrs, then 2 hrs on 140F in sous vide and Searzall mayo sear. Texture was excellent and flavors really popped. Excited to try a 72 hr koji rice next!
