He doesn’t deny himself, which is why he can’t sin. It’s contrary to his nature. Sin is like a disability, it’s good that God can’t sin.

If you're saying it's illogical for him to sin, that's another way of saying he can't do certain things. Basically saying 'he's all powerful as long as he only does the things he's capable of and we'll call the rest illogical'.
Is God subject to the rules of logic? Would you say logic itself is more powerful and he has to act in accordance with this higher power? It seems like contradictions have to be made whichever way you slice it.
If evil happens then God either allows it or can't stop it. He's either evil, allowing evil, or not all powerful, or good and evil don't exist. He either has free will and can try to be evil, or his choices are limited and his will isn't free.

If he were to lie he would be denying himself and he would no longer be truth, which is impossible. Being all powerful doesn’t mean you’re able to do things that are illogical.

So he can't commit evil but can do whatever he wants. That sounds indistinguishable from saying he can commit evil but chooses not to. If he actually can't (by inability or lack of the will to) then he isn't free to do so, and must not have free will, OR isn't all powerful.
I can't see a way around this other than to say that what he does is not evil by definition. Then he logically can't commit evil because the act of him doing it makes it non-evil. That would preserve free will and unlimited power, but diminish the meaning of evil.
