It definitely was a misunderstanding of the culinary term. But there’s the lack of credit in the original tweet that. He didn’t mention the Philippines at all or the inspo for his recipe. He mentions aapi but there’s so many asian cultures? It’s cultural erasure.

guys the issue isnt that he "developed" a recipe .. its him basically calling it some deconstructed vegan coconut ube ice cream instead of naming it as the actual thing: FILIPINO SORBETES ! its downright cultural erasure WHAT ARE WE NOT GETTING HERE

filipino here! instead of ube, u might actually want to try its alternative — kurot 🫶 almost the same as ube, purple-pigmented but richer, sweeter, and fuller in flavor. in fact, you can eat it raw unlike ube which requires a taxing preparation. foreigners should give it a try!

Tofu is the only plant food which churns well without stabilizers, but it is such a strong flavor on its own that you have to make anything else punch above its weight. So I'm basically developing recipes primary inspired by established cuisines with tofu.
