You can also do the reverse. Receive Bitcoin/Lightning payments as GBP but I mean who doesn’t want Bitcoin 😂⚡️

This seems to be the way in which one would want the network topography of the Lightning Network to emerge; in a grassroots way that mimics the way complex systems of different sizes tend to emerge in nature.
