As theses children learn to make za'atar manakish, they are learning far more than a recipe. They are preserving culture, carrying forward memories of home, and protecting an identity that others have tried so hard to erase.
This summer at the Hasan School in Refaat Alareer Camp, the teens in the camp gathered around dough, za'atar, and generations of Palestinian tradition.
Palestinian cuisine tells the story of a people deeply connected to their land. Every handful of za'atar, every drizzle of olive oil, and every piece of freshly baked bread carries the traditions of parents, grandparents, and countless generations before them.
Preserving culture is an act of resilience, and teaching the next generation these traditions is another way Palestinians continue to endure.
