Another thing that works well in a Weber is the “charcoal snake”
You make a small pile of charcoal that stretches in a line around the edge of the fire grate at the wall of the grill and light one end of it with a few hot coals. It will burn slowly from one end to the other and you control the heat with the bottom and top vents. When you get it right you can keep a low temp smoke going for a long time.
