A bit of a geek who loves food. I blog about what I cook: expect potatoes and other recipes. https://t.co/crLssdh1PY for bits and pieces I'm working on.

@sueperkins I’m putting together a video revisiting Heston Blumenthal’s Christmas Feast from 2007 which you appeared in. Would you be up for sharing a quick memory or thought about that experience? Just a line or two would be brilliant. Thanks so much! 👀 dailymotion.com/video/xndwm1

My blog is 17 years old today. Since 2007 I've been writing about all sorts of rubbish rattling around my head, and there's still room for more! Thanks for reading.

@NicolaS43468117 Hiya! I do block / remove many, many comments and commenters every day. It helps _a lot_ to have a thick skin and frankly, not care about people's opinions who I don't know but are just being insulting. I love engaging with people in the comments who want a constructive chat.

@BakeEurope Lovely to see a bit of Wilkin and Sons AKA Tiptree jam, which is made in my county but found on breakfast tables all over the world 😊

What could be more English 🏴󠁧󠁢󠁥󠁮󠁧󠁿 than marmalade? I mean, Paddington isn't eating Scandanavian cloudberry jam sandwiches. But the history of that tangy spread goes back to the Romans, who preserved not oranges, but quinces, in a honey and grape syrup (defrutum). The spread remained popular for centuries in Southern Europe. So much so that by the 1500s, Henry VIII had a box of preserved "marmalos" (quinces) imported from Portugal 🇵🇹. Now, at some point, about 2 centuries later, someone started doing this with imported bitter oranges in Britain 🇬🇧. We have recipes that start appearing, but none are as clear as the legend, supposedly disproved, that I'll recount below: In 1770, a man named James Keiller from Dundee 🏴󠁧󠁢󠁳󠁣󠁴󠁿 bought a box of oranges for very cheap. He planned to sell them for a tidy profit, only to discover that they were bitter "Seville" oranges. Keiller's wife had the genius idea to preserve them in the style of quinces, and the concoction, Dundee Marmalade, was born. Legend or not, the Keiller Company still produces a variety of orange marmalades, including a black variety made with molasses and brown sugar. Whatever it's origins, orange marmalade is now inseparable from British culture. Are you a fan? I love it with a bit if butter on some freshly baked sourdough bread!
