At the start of 2025, we set out to build the AI team member for hospitality operators. The idea was simple: If you use Enso, you’ve effectively hired an automation teammate. So we built EnsoAI AutoPilot V2 — an AI that could message guests, follow policies, and handle conversations like your team would. Sounds simple, right? It wasn’t. Here’s what actually happened 👇 When we gave the AI too much freedom, it worked like Anchorman’s quote: “60% of the time, it works every time.” When we tightened the guardrails, it worked 100% of the time… but only for 10–15% of messages. And when mistakes happened, hospitality pros shut it off instantly - to protect their brand. That’s when we realized the real problem wasn’t the model. It wasn’t even the rules. It was the training data — the invisible knowledge that makes humans “get it.” So we made the training part of the workflow. No friction. If we detect a conflict, we surface it. If we find missing context, we suggest it. You just approve — and it learns. As we rolled this out, the results compounded: 18% → 42% → 64% → … message acceptance 10% → 28% → … AI automation rates…and climbing. So what we’ve learned from this?
