Who wants my shrimp and grits recipe?? 🙋🏼‍♀️ For The Grits: 👉🏼 2 cups chicken stock 👉🏼 2 cups milk 👉🏼 1 cup stone ground grits 👉🏼 2 tablespoon butter 👉🏼 2 cups shredded white cheddar 👉🏼 Texas Pete to taste 👉🏼 Salt & Pepper For the Shrimp: 👉🏼 ½ lb bacon 👉🏼 2 lbs lg peeled & deveined shrimp 👉🏼 Cajun Seasoning 👉🏼 Texas Pete 👉🏼 red pepper flakes 👉🏼 minced garlic 👉🏼 small diced red and bell peppers 👉🏼 Salt & Pepper Instructions: 1. Bring chicken broth, milk, and Texas Pete to a boil. Add grits, and whisk well. Reduce heat to low and cook until done. Remove from heat and stir in butter and cheese. Salt and pepper to taste. Cover until ready to serve. 2. In a large skillet, fry bacon over medium-high heat until crisp. Set bacon on paper bags to drain. Reserve bacon grease. Turn the heat down to medium. 3. Mix shrimp, red pepper flakes, Cajun seasoning, Texas Pete, minced garlic, and diced peppers in a mixing bowl. Pour the shrimp mixture into the bacon grease, and saute the shrimp until done. Season to taste. 4. Divide the grits into serving bowls. Top with crumbled bacon and shrimp. You. Are. Welcome.

Beshear's recent comments on data centers in Kentucky perfectly explain why governments aren't just allowing data centers but actively incentivizing them. He stated, "Yes, we have concerns about energy prices, and we’ve got to address those. On the flip side, it could double the budget of many of our public school systems." Do our citizens want them? No. But man, what if the government had more money? Wouldn't that make our lives better? I understand the U.S. may need data centers, but does Kentucky need to be handing out tax incentives and cash to attract them here?
