I know people who earn more than that and I don’t even spend that much on food. And the tax figures? On £2,800 gross monthly, income tax and NI combined would usually be higher than what’s listed unless something is missing like pension contributions or student loan deductions. The numbers do not add up cleanly. So yes, some people live pay cheque to pay cheque. But in this example, a large part of it is choice. You cannot complain about drowning while choosing the deep end. The problem is not the UK. It’s your lifestyle. A genuinely conservative person on £2,800 can live well and still have over £1,000 left.
