@BenSulston I’ve invested a lot in lamb bonds over the years 😊

Utilising the whole chine of lamb this week. Using the fillets and belly for a starter tomorrow. Rendering down the fat to cook the cannons and fillets. The cannons and belly for a main course on Friday. And of course making a stock with the bonds and trimmings for the sauce.
