@CSaundersUK @vineanddine @GlobalCalgary Something for Alberta to ponder: when I studied in York, fish and chips tasted distinctly and deliciously different, because in Yorkshire they are fried in beef fat - which lends an amazing depth of richness and flavour - and makes an amazing chip butty.

@CSaundersUK @GlobalCalgary @CulinaireMag Crispy, crinkly, battered, boneless fillet that tapers off towards the tail - no actual bone (or fin!). Not a rectangular fish steak (sorry, Buchanan’s). Batter must be crispy and light, but with body, not like tempura, and certainly not doughy.

@CSaundersUK @GlobalCalgary @CulinaireMag Just a few humble observations on the selection in the pic- 1) only one plate had chips rather than fries 2) the vinegar has to be Sarson’s 3) the fish fillet needs to have a crispy tail 4) the batter should be crisp & crinkly, never smooth 5) Chandon? I like the way you roll!
