@Aequalatus @lukeisamazing servers in the US almost always make more money with tips than they would without them. there’s a reason why restaurants that don’t encourage tipping pay their servers far higher than the minimum wage for the area. like casa bonita pays $20/hr.

every European grievance about America comes down to the fact that, despite being warned about it, they didn’t plan to tip when they took a vacation here once, got bad service bc they refused to tip, and have been grievance peddling about it ever since

easiest way to explain this is that american drinks are kind of non-linear because every order you pay a little serf tax to their service class, and after about three drinks the bartender recognises you as a more reliable ally than the bar owner and mixes drinks at 2-3x strength
