Ok verdict on these: ABSOLUTELY WORTH IT.
I used 2lbs beef, seasoned with some generous Cajun seasoning, cracked an egg in there, 3 green onion stalks, and about 2/3rds of an average white onion very finely chopped.
There is a sort of "minimum thickness" the beef will allow for when flattening by hand, and if you do that 1 pack of standard burrito size tortillas will work.
In retrospect I would have quartered them instead of doing 1/3rds, but my knifework is more appropriate to horror films than cooking shows.
Got them on the grill, seared 2 sides and was basting and I ran out of propane, so wound up finishing on a flat griddle.
For the glaze, I did 1 stick butter, 1/3rd of a cup of honey, 1tsp of garlic, 1 tsp of the Cajun seasoning, and a dash of cayenne (you could go bolder or more, but my audience in this case don't do spicy).
Yield was 3 freaking huge skewers, and 1 fed a hearty lunch to 2 adults, so pretty awesome.
The only think I would change is having adequate propane next time, as I feel like we missed out a little on the grilled flavor, and I had intended to really drop the heat and go low-and-slow after searing.
Will do again!
