@simosi @kurtzwell Some of the best smoked brisket I've ever had is from a small smoke shack BBQ restaurant in Greer, South Carolina. They smoke their brisket for 19 hours. It is so good; it approaches the intensity of a religious experience.

@simosi @kurtzwell You must smoke between 225-250 (lower is better), but control the moisture content also. This is done by basting every 2-3 hours, more or less, for 8-12 hours, or more.
At some point (often 4-8 hours into the smoke), many cooks will wrap in paper or foil, and baste/spritz/rub.

@simosi Instead of aluminum foil, try butcher paper! Also, put some Apple Cider Vinegar in a spray bottle, and give a light spray before wrapping the butcher paper. Just a couple spritz. You don't want it wet, just moistened.
