@DrCasteelEM It doesn't. It has a remedial role. Excessive glucose leading to ongoing IR, inflammation and hypertension and the ensuing arterial damage, and LDL glycation, should never happen. Just some fat storage pre winter.

I’m at the point where I don’t believe any of these studies where people “didn’t eat seed oils”. So, they went to zero restaurants? Ate basically no food from packages? Never had salad dressing or used sauces? The only people NOT eating seed oils are those who are VERY specifically altering their lives in drastic ways, and people with crippling OCD and they only eat boiled cabbage or something. (Rare)

That’s a slogan, not a definition. “Processed food” covers everything from yogurt and olive oil to soda and Doritos. Lumping them together is like saying “drugs are bad” and ignoring the difference between insulin and heroin. Some processing is neutral or beneficial: pasteurization, freezing, fermenting, milling whole grains, making yogurt, canning beans—these improve safety, shelf life, and often nutrient availability. Patterns built on these foods—like the Mediterranean model tested in PREDIMED Trial—show clear health benefits. What is associated with harm is ultra-processed food: hyper-palatable, energy-dense, rapidly consumed products that drive excess intake. So no—processing itself isn’t the villain. The problem is what we’ve chosen to do with it.
