@NicolleDWallace Stuffing between the skin and meat. Separate the skin, leave some points attached so it doesn’t totally separate as it shrinks during roasting. Stuffing should be moist with olive oil (or other), stock, herbs, garlic, onion (finely chopped). Secure skin with toothpicks.
