Before everyone went crazy with fussy sourdough a few years ago, bucket bread (or the bougie version “artisan bread in 5 minutes a day”) was all the rage.
You can bake it exactly the same as sourdough, but it’s 100% less temperamental. And delicious.

@eckiam You put this in the bucket, and then mix it until it's mostly combined, and then leave it sitting out a couple hours until it rises to the top of the bucket, and then you put it in the fridge and ignore it until the day you want to make bread sometime in the next week or two.
