10 easy tips to enhance or retain the nutrients in your meals :- 1. Buy fresh produce and store properly in refrigerator if not consuming immediately. Fruits and vegetables lose their optimal nutrition as soon as they are picked & vitamins such as C, E, A, and some B vitamins begin to deteriorate. 2. Wash before chopping and cut in big chunks because some of their vitamins such as Vitamin B and C are water soluble. Scrub all foods before cutting properly to wash away insecticides n pesticides.Keep food covered at all times to avoid enzymatic browning, dust, pests. 3. Cook in iron Kadhai as it helps to increase the iron intake in the body. However, you should avoid cooking foods that are acidic in nature like lemon, tomatoes, vinegar as this may trigger reactions . Also, never store cooked food in iron pans for hours. 4. Adding chutney ( mint,cococnut,tomato,hummus, guacamole etc) or powders like mint powder, kasuri methi, grated coconut etc is a great way to enhance nutrition in daily diet. 5.
