Yeah it’s terrible. Tradition is no excuse to suck. We’ve had a real BBQ tradition in Texas that goes back centuries. Brisket is King but sausage and ribs are right there with it. We call it the Holy Trinity. Our barbecue culture is backyard driven with the best ideas and techniques move from private homes to become restaurant food. There is no living BBQ tradition here in Carolina. Just people holding on to meat slop and pretending it’s good.
