Complete nonsense. The stuff you buy at American supermarkets maybe. It has nothing to do with traditional sausage. An Italian air-cured salami should consist of meat, fat, salt and spices, and more modern manufacturers include a mix of salt and NaNO2, which can produce nitrates. But the level of those found in processed meat are negligible compared to many vegetables. Traditional German ham and sausage are similar. A quality product from your local butcher contains meat, curing salt and a few spices, and that's it. There's NO WAY you can tell me that by some magic, preservation techniques that are TENS OF THOUSANDS of years old suddenly produce carcinogens.
