Step by step recipe: 1. The Batter ​Whisk 1 cup besan, 1 tbsp suji, a pinch of turmeric, 1 tsp sugar, 1 tsp ginger-chilli paste, 1 tbsp lemon juice, 1 tbsp oil, and \frac{3}{4} cup water into a smooth batter. ​2. The Setup ​Bring 2 cups of water to a boil in your steamer. Grease a cake tin or steel container with oil. ​3. The Rise ​Add 1 tsp Eno to the batter, splash a tiny bit of water on it to activate, and stir quickly in one direction until frothy. Pour immediately into the greased tin. ​4. The Steam ​Place the tin inside the steamer, cover tightly, and steam on medium-high heat for 12–15 minutes. Test with a toothpick; it should come out clean. Let it cool for 2 minutes, then slice. ​5. The Tempering ​Heat 1 tbsp oil, crackle 1 tsp mustard seeds, 1 tsp sesame seeds, a few curry leaves, and 2 split green chillies. Pour in \frac{1}{3} cup water and 2 tsp sugar, bring to a boil, then pour hot over the dhokla pieces. Garnish with coriander.
