You just said there’s ‘no guilt in not tipping if the service is genuinely bad.’ That’s true everywhere. Nobody is arguing you should tip for terrible service. That’s a strawman. My argument has never been ‘tip no matter what.’ It’s that the tipping system as a whole is more efficient and better for servers than eliminating it…
Now let’s talk about your SF claim. You said food is ‘sometimes cheaper and better in SF due to competition.’ SF rent is astronomically higher than Austin and Miami. Server wages are higher. Operating costs are higher. And you’re telling me the food is sometimes CHEAPER??? If that’s true, where do you think the cost is being absorbed? It’s not magic. Either the restaurant is running on razor-thin margins, the portions are smaller, the quality of ingredients is lower somewhere you’re not noticing, or the owner is subsidizing it to stay competitive and bleeding money. Restaurants in SF close at one of the highest rates in the country. You’re pointing to a market that is notorious for restaurant failure and calling it a model…
And no, I’m not ‘worried restaurants will go bankrupt.’ I’m pointing out that they ALREADY DO. The restaurant failure rate is brutal, and labor costs are the number one controllable expense. You’re using a city where restaurants close constantly as evidence that higher labor costs don’t matter. Read that back to yourself…

You’ve been building a case for why you shouldn’t have to tip by systematically erasing every aspect of what a server actually does until all that’s left is ‘takes order, brings food.’ That’s contempt for service workers dressed up as logic…
And you DON’T know more than the server. You know what YOU want to eat. The server knows the entire menu, the kitchen’s timing, which dishes are running behind, which items 86’d ten minutes ago, which wine pairs with your porterhouse, how to stagger courses for a table of six, and how to manage your table while juggling five others. You knowing how you like your steak cooked is not the same as knowing how to run a section. That’s like saying you know more than your mechanic because you know where you want to drive…

OK let’s use YOUR logic. Nothing but YOUR logic. You say the server’s only job is to take the order. That’s it. Just writes down what you said. Same task whether it’s a salad or a porterhouse. Fine. Let’s ride with that…
If the server’s ONLY function is to take the order, and that task is identical regardless of the dish, then by YOUR logic there is no difference between a server at a Michelin star restaurant and someone taking orders at McDonald’s. Both of them ‘just take the order, period.’ You tell them what you want. They write it down. Same work exactly, right???
So should they earn the same??? Because if your answer is no, you just admitted the job ISN’T just taking the order. And if your answer is yes, nobody is working at a high-end restaurant for McDonald’s wages, and your porterhouse doesn’t get served. Either way, your argument collapses…
You also keep ignoring that a server’s job doesn’t end when they write down your order. When your porterhouse comes out mid-rare instead of medium, the server manages the complaint, coordinates the refire with the kitchen, adjusts the timing for the rest of the table, and possibly comps something to keep you happy. When a salad comes out wrong, they bring a new one in 90 seconds. The RISK and ACCOUNTABILITY scale with the price of the dish whether you want to acknowledge it or not…

A porterhouse just needs to be ordered by the diner with the right way to the waiter takes my order, period, I tell him how I want it cooked.
