On this day 13 years ago, my only son was sworn in to the US Army. In ten days, it will be 12 years since he was killed in Afghanistan 2 weeks before he was due to come home. He was just 21. This week is also Memorial Day. My greatest fear now is that he will be forgotten. Please help me remember my boy during this tough week of special dates (share if you feel inspired. Luscious Beef Medallions in a Brandy Mushroom Sauce Ingredients: 4 beef tenderloin steaks, about 1-inch thick Salt and black pepper to taste 2 tablespoons olive oil 2 tablespoons butter 1 shallot, finely chopped 1 clove garlic, minced 1 cup mushrooms, sliced 1/4 cup brandy 1 teaspoon Dijon mustard 1/2 cup heavy cream 1 teaspoon Worcestershire sauce 1 tablespoon parsley, chopped Directions: Season the steaks with salt and pepper. Heat olive oil in a skillet over medium-high heat. Add the steaks and sear until browned on both sides, about 3-4 minutes per side. Remove steaks from skillet and set aside. In the same skillet, reduce heat to medium. Add butter, shallot, and garlic. Sauté until the shallot is translucent. Add mushrooms and cook until they are browned. Carefully pour in the brandy and let it reduce by half, scraping the bottom of the skillet to deglaze. Stir in Dijon mustard, heavy cream, and Worcestershire sauce. Bring to a simmer. Return the steaks to the skillet and cook for an additional 2-3 minutes, or until they reach the desired doneness.
