During the last supper Jesus most likely converted the Bread and wine into his flesh and blood.
But still as you said, we can't do that, for us it should be symbolic. A remembrance.

The Eucharist is symbolic because Jesus says "do this in rememberance of me" its symbolic, its rememberance.
The Bible doesnt say that its his flesh and blood or transubstantiation.
Transubstantiation is no where in scripture (literal body and blood of Christ)
Where does it say its the literal body and blood?
You are drinking and eating it in rememberance, its metaphor, not literal.
The literal Blood and Body of Christ is Cannibalism, Jesus didnt cut a part of hiself off and give it to the Apostles, its cannibalism, its metaphorical.
