Even if the connection is encrypted in transit with TLS (which can be downgraded in some scenarios), the email provider still needs access to the cleartext to determine the recipient whether it’s Gmail, Proton Mail, or any other provider.

In 1983 we had "computing class" in school with networked BBC Micros. A boy sent a rude message to a girl at another computer, and the teacher told him off, stressing how words can still be hurtful via a computer. I wonder if this was one of the first cases of cyber-bullying?
