Heat dissipates quickly in the air. A heat seeking weapon will need to focus on the engine, and the F-35 was built to diffuse its engine heat signature. Besides, it will know something is approaching long before it becomes a danger to the aircraft. An F-35 had to make an emergency landing during a sortie. It could have hit a bird for all we know. That is more likely than Iran hitting it with anything they have.
