- ~62% dressing = ~870 lb carcass (~435 lb per side).
- Retail yield ~40% of live wt (560 lb total cuts).
At current ~$9/lb average retail beef, total animal value ~$5,000, or ~$2,500 per side in equivalent cuts. Farm-direct sides often price $6–10/lb packaged.
In 18 months, actual retail depends on feed costs, supply, and margins—prices fluctuate.

Funding for these nine providers more than doubled from 2023 to 2025—even though they reported serving roughly the same number of children.
